Maple-Mustard Chicken Apple Skillet




Ingredients
- 1 lb boneless skinless chicken breast or thighs, cut into bite-size pieces
- 2 medium apples, thinly sliced
- 12 oz Brussels sprouts, trimmed and halved
- 1 can white beans, drained and rinsed
- 2 cups cooked brown rice
- 1 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- Optional: 2 tbsp chopped parsley
Method
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper, then sear until browned and cooked through.
- Add Brussels sprouts and apples. Cook until the sprouts are crisp-tender and apples soften.
- Whisk Dijon mustard, maple syrup, apple cider vinegar, garlic, and thyme.
- Stir the sauce and white beans into the skillet until warmed through.
- Serve over cooked brown rice and finish with parsley if using.
