One-Pan Mediterranean Cod Tomato Potato Plates




Ingredients
- 1 1/4 lb cod fillets
- 1 lb baby potatoes, halved
- 2 cups cherry tomatoes
- 2 cups green beans
- 1/3 cup olives
- 2 tbsp olive oil
- 1 lemon
- 2 garlic cloves, grated
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 cup Greek yogurt
- 2 tbsp chopped dill
- Salt and pepper
Method
- Heat oven to 425F. Toss potatoes with 1 tbsp olive oil, salt, pepper, and half the oregano. Roast 15 minutes.
- Add tomatoes and green beans to the pan.
- Nestle cod on top of the vegetables.
- Mix remaining olive oil, lemon juice, garlic, oregano, and paprika. Drizzle over the cod and vegetables.
- Bake 10-12 minutes, until the cod flakes easily and the potatoes are tender.
- Stir dill into Greek yogurt and spoon onto plates before serving.
