Pizza-Stuffed Pepper Turkey Rice Skillet




Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 3 medium bell peppers, diced
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups cooked brown rice
- 1 1/2 cups low-sodium marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup shredded part-skim mozzarella
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped fresh basil
Method
- Warm olive oil in a large skillet over medium heat.
- Cook turkey for 5 to 6 minutes, breaking it into small crumbles.
- Add peppers, onion, garlic, Italian seasoning, paprika, salt, and pepper. Cook 6 minutes.
- Stir in cooked brown rice and marinara until hot.
- Sprinkle mozzarella and Parmesan over the skillet, cover, and cook 2 to 3 minutes.
- Finish with basil and serve warm.
