Turkey Pesto Zucchini Orzo Skillet




Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups dry whole-wheat orzo
- 2 cups low-sodium chicken broth
- 1 medium zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels, fresh or frozen
- 1/3 cup basil pesto
- 1/4 cup grated Parmesan
- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons chopped basil
Method
- Warm olive oil in a large skillet over medium heat.
- Cook turkey and onion for 5 to 6 minutes, breaking the turkey into small pieces.
- Add garlic and orzo, then stir for 1 minute.
- Add broth, zucchini, tomatoes, corn, salt, and pepper. Simmer covered for 10 to 12 minutes, stirring once or twice.
- Stir in pesto, Parmesan, and lemon juice.
- Rest for 3 minutes, then finish with basil if using.
