Sesame Tuna Edamame Soba Crunch Boxes

Ingredients

  • 8 ounces soba noodles
  • 2 cans tuna, drained
  • 2 cups shelled edamame
  • 1 cucumber, sliced
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 tablespoons tahini
  • 2 tablespoons soy sauce
  • 1 lime
  • 1 tablespoon sesame oil
  • 2 scallions, sliced
  • 1 tablespoon sesame seeds

Method

  1. Cook soba noodles according to package directions.
  2. Rinse the noodles under cool water and drain well.
  3. Whisk tahini, soy sauce, lime juice, sesame oil, and 2 tablespoons water until smooth.
  4. Divide noodles, edamame, cucumber, cabbage, and carrots across 4 containers.
  5. Add canned tuna flakes, scallions, and sesame seeds.
  6. Keep dressing separate until serving, then drizzle and toss.
